Paleo Shepherd’s Pie

Ingredients
For Mashed Cauliflower Topping:
- 1 medium head of cauliflower, chopped into florets
- 1 Tbsp grass fed ghee or butter
- Salt & pepper to taste
For Filling:
- 1 Tbsp ghee
- 2 medium carrots, peeled and diced
- 2 celery stalks, diced
- 1 small yellow onion, diced
- 1 pound grass fed ground beef
- 1 Tbsp tomato paste
- ⅓ cup water
- 2 Tbsp coconut aminos
- 2 scoops Paleovalley Savory Bone Broth Protein Powder
- 1 Tbsp fresh parsley, chopped

- Potato masher or food processor
- Skillet
- Casserole dish
Directions
- Steam or boil the cauliflower florets in a large pot until tender, about 10 minutes. Drain any excess water and transfer the cauliflower to a mixing bowl with ghee or butter. Mash well using a potato masher. Add salt and pepper to taste and stir. Set aside.
- In a large skillet, heat ghee over medium heat. Add the diced carrots, celery, and onion to the pan. Sauté for about 5 minutes.
- Add ground beef and break up with a spatula. Cook for 5-6 minutes, until mostly cooked.
- Stir in the tomato paste and cook for another 2 minutes. Add the water, coconut aminos, and bone broth powder. Stir well to combine. Simmer for 3 minutes.
- Preheat oven to broil. Transfer the vegetable mixture to a baking dish and spread evenly. Spoon the mashed cauliflower on top of the vegetable filling and spread evenly.
- Transfer to oven and broil for about 6-8 minutes, or until the top is lightly browned.
- Remove from the oven and let it cool slightly before serving. Top with fresh parsley.
