Hydrating Watermelon Mousse

Serves: 4

Ingredients

  • 4 cups of watermelon juice (if seedless, you can purée the watermelon in a blender)
  • 2 Tbsp gelatin
  • 2 scoops Paleovalley Watermelon Essential Electrolytes
  • ¼ cup honey 
  • 1 cup coconut cream (pure coconut cream or hardened top of refrigerated can of coconut milk)
  • 1 tsp vanilla extract
  • 3 cups small cubes of watermelon
  • Extra pieces of watermelon to garnish

Equipment

  • Juicer or blender
  • Stovetop pan

Directions

  1. Juice enough watermelon in your juicer to equal 4 cups. Alternatively, if your watermelon is seedless, you can puree it in a blender.
  2. Add 1 cup of watermelon juice to a small saucepan. Whisk in the gelatin over medium heat until dissolved.
  3. Remove from heat and whisk in honey, Paleovalley Watermelon Essential Electrolytes, and the remaining watermelon juice. Cool in the fridge for at least 2 hours until set.
  4. Whip your coconut cream with the vanilla extract.
  5. Fold the coconut cream and watermelon cubes into your cooled melon gelatin mixture. Serve immediately or refrigerate until ready to serve.
