Golden Milk Cheesecake Bars

Ingredients

For Crust

  • 1 cups pitted dates
  • 2 cups raw pecan halves 
  • 2 Tbsp coconut oil, melted 
  • ¼  tsp sea salt 

For Cheesecake Layer

  • 2 cups raw cashews 
  • 1 cup unsweetened canned coconut milk  
  • 2 Tbsp fresh lemon juice 
  • 2 scoops Paleovalley Golden Milk Powder 
  • ¼ cup coconut oil, melted 

Equipment

  • 8x8 baking pan 
  • Food processor 

Directions

  1. Line and 8x8 pan with parchment paper overlapping sides. 
  2. Cover cashews with hot water and soak for 10 minutes. 
  3. In the meantime, add dates to a food processor and blend until finely chopped. Add pecans, coconut oil, and salt. Continue to blend until pecans are finely chopped and mixture is sticky. 
  4. Press mixture firmly into pan with damp fingers. 
  5. Drain water from cashews and add to food processor. Add coconut milk, lemon juice, golden milk powder, and coconut oil. Blend until smooth and creamy. Pour mixture over crust and smooth evenly. Freeze for 30 minutes or until firm. 
  6. Slice into 16 bars. Store bars in an airtight container in refrigerator.
