Apple Cider Electrolyte Cookies

Ingredients

  • 1 ½ cups blanched almond flour 
  • ½ cup cassava or arrowroot flour
  • 2 scoops Paleovalley Spiced Apple Cider Electrolytes 
  • 1 tsp baking powder 
  • 1 tsp cinnamon 
  • ½  cup unsalted grass fed butter, softened
  • 2 Tbsp date sugar or coconut sugar 
  • 1 large pasture-raised egg 
  • 1 tsp vanilla extract 
  • ½ cup grated apple

Equipment

  • Mixing bowl
  • Hand mixer
  • Baking sheet
  • Parchment paper

Directions

  1. Whisk together almond flour, cassava flour, electrolyte powder, baking powder, and cinnamon in a medium mixing bowl.

  2. In a separate large mixing bowl, use a hand mixer to beat together butter and date sugar until smooth and creamy, about 30 seconds. Add egg and vanilla extract and beat until just combined. 

  3. Gradually beat dry ingredients into wet until just combined. Fold in grated apple. 

  4. Form dough into a 7-8 inch log on a sheet of parchment paper. Wrap and freeze for 30 minutes, until firm. 

  5. Preheat oven to 350ºF and line a large baking sheet with parchment paper. 

  6. Unwrap dough and slice into ½ inch thick cookies with a sharp knife. Place on baking sheet 2 inches apart. 

  7. Bake cookies for 16-18 minutes, until edges are golden brown. 

  8. Cool cookies on baking sheet 10 minutes. Transfer to a wire cooling rack and cool 10 minutes longer before enjoying.
