Ingredients

For Muffins

  • 1 cup almond flour 
  • 2 scoops Paleovalley Superfood Golden Milk Powder 
  • 2 Tbsp coconut sugar (or 1 tsp powdered monk fruit or stevia)
  • 1 tsp baking powder 
  • 2 large pasture-raised eggs 
  • ¼ cup melted unsalted grass fed butter 
  • ½ cup grated carrot 
  • ⅓ cup chopped raw pecans

For Topping

  • 2 Tbsp almond flour 
  • ¼ cup chopped raw pecans 
  • 2 tsp melted grass fed butter 
  • 1 tsp coconut sugar (or ⅛ tsp powdered monk fruit or stevia)

Equipment

  • Muffin tin
  • Mixing bowl
  • Unbleached paper muffin liners

Directions

  1. Preheat oven to 350ºF and line 6 muffin tins with paper muffin cup liners. Spray with avocado or olive oil cooking spray. In a large mixing bowl, whisk together almond flour, Superfood Golden Milk Powder, coconut sugar and baking powder. 

  2. Add eggs and melted butter and stir until just combined. Fold in grated carrots and chopped pecans. 

  3. Divide batter evenly between muffin tins. In a small bowl, stir together ingredients for crumble topping until moistened. Sprinkle topping over muffins. 

  4. Bake for 22-25 minutes. Cool muffins at room temperature for 15 minutes before removing from muffin tin.
