The Hidden Fat Imbalance Behind Obesity with Dr. Anthony Hulbert
What if the type of fat you eat matters far more than the amount?
In this episode of the ReThink Health Podcast, I sit down with Dr. Anthony Hulbert, an emeritus professor, zoologist, and author of Omega Balance, which won a book of the year award. (It's one of my favorite books, and I've read it three times!)
My dissertation research looked at how the fatty acid profile of beef changes depending on what the animal eats, and we used Dr. Hulbert's omega balance concept to measure it. His work changed how I shop, how I cook, and even how I feel in my body.
Dr. Hulbert explains why omega-3 and omega-6 fats are two separate essential nutrients that should never be lumped together as "polyunsaturated fats." He shares how the balance between them has dropped from about 40% omega-3 in the Paleolithic diet to roughly 10% in the modern American diet, and as low as 1% in ultra-processed foods. He also walks us through three ways he believes this imbalance may drive fat gain, cravings, and insulin resistance.

About Dr. Anthony Hulbert
Dr. Anthony Hulbert is an emeritus professor and zoologist. Comparing mammals and reptiles, his lab discovered that animals with higher metabolic rates had more omega-3 fats in their cell membranes. That finding led to decades of research on how membrane fats influence metabolism and longevity.
A Fulbright award later brought him to the United States, where he analyzed tissue samples from people undergoing bariatric surgery in Boston. He is the author of Omega Balance, an award-winning book that explains how the balance of omega-3 and omega-6 fats in our food shapes obesity, insulin resistance, and other chronic conditions.
