  • Hand mixer
  • Loaf Pan

Directions

  1. Scoop thick cream portion of coconut cream into a mixing bowl. Use a hand mixer to beat coconut cream until fluffy, about 1 minute. 
  2. Add coconut milk and protein powder. Continue to mix until fully incorporated. 
  3. Pour into loaf pan. Freeze for 3 hours, until just firm, stirring every 30 minutes for the first 2 hours, for even freezing. 
  4. While ice cream freezes, melt ghee in a small saucepan over low heat. Gradually stir in bone broth protein powder and vanilla extract. Thin mixture with 2 tablespoons of water and continue to stir until smooth. Transfer to a small bowl or jar. Cool to room temperature.
  5. Scoop ice cream into small bowls and drizzle with caramel. Top with chopped nuts or fresh fruit.
