Paleo Lemon Coconut Superfood Bars Recipe

Paleo Lemon Coconut Superfood Bars

Ingredients

Crust

Filling

  • 4 eggs + 1 yolk
  • ½ cup lemon juice
  • ½ cup maple syrup
  • ¾ tsp vanilla extract
  • Zest from one lemon
  • 2 Tbsp tapioca flour
  • Organic powdered sugar for dusting (alternatively, use coconut sugar or omit)

Equipment

  • Large bowl for mixing
  • 8 x 8 or 9 x 9 pan (bars will be thinner in 9 x 9 pan)

Directions

  1. Preheat your oven to 350ºF. Grease your baking pan with oil.
  2. Thoroughly combine all crust ingredients in a bowl with a fork, including the almond flour, coconut flour, Paleovalley Lemon Meringue Superfood Bar chunks, melted coconut oil, maple syrup, vanilla and salt.
  3. Add crust to your pan, pressing it down in an even layer along the bottom with your hands. Bake for 17 minutes.
  4. Now prepare the filling. Combine the eggs plus one yolk, maple syrup, lemon zest, lemon juice, and vanilla in a bowl. Whisk until the eggs are well combined. Lastly, add the tapioca flour and whisk thoroughly. 
  5. Once the crust is finished, immediately remove it from oven and pour the mixture over top. Return it to the oven, reduce the temperature to 325ºF, and bake for 20 more minutes.
  6. When the bars are finished, let them cool on the stovetop for 30 minutes, then move them to the refrigerator. Let cool for 2 hours before cutting into squares. Serve sprinkled with organic powdered sugar, coconut sugar, or as-is!
