Deep Sleep Strawberries and Cream Pots

Serves: 4

Ingredients

For Strawberry Cream

  • 1 ½  cups unsweetened full fat coconut milk
  • 4 scoops Paleovalley Strawberries and Cream Sleep Protein 
  • 1 Tbsp grass fed gelatin

For Strawberry Jam

  • 1 cup chopped strawberries 
  • 2 Tbsp filtered water 
  • 1 Tbsp chia seeds

Equipment

  • Saucepan 
  • 4 small jars 

Directions

  1. Heat coconut milk over low heat in a small saucepan. Once steaming, turn heat off and whisk in protein and gelatin until dissolved. 
  2. Divide mixture between 4 small jars. Refrigerate for 2 hours, until firm. 
  3. Add chopped strawberries and water to a saucepan over medium-low heat. Heat until strawberries soften, about 5-7 minutes. 
  4. Turn heat off. Use a fork or potato masher to mash strawberries until smooth. Stir in chia seeds. Transfer to a small bowl and refrigerate for 2 hours to chill. 
  5. Top each strawberry cream layer with spoonfuls of jam. Refrigerate until enjoying.
