According to Dr. Chris Knobbe, at the end of the American Civil War:
- Only about 1% of the population was obese
- Heart disease was almost unheard of
- Cancer and diabetes were exceedingly rare
- Alzheimer’s and age-related macular degeneration were unknown
In other words, chronic disease was rare in America, which is not the case today.
Although animal fats, sugar, and carbohydrates often take the blame for our rising disease rates, Dr. Knobbe's new book, The Ancestral Diet Revolution, argues that the real dietary villains are the vegetable oils that have replaced traditional animal fats.

BIO
Chris Knobbe, MD, is a physician, researcher, ophthalmologist, public health advocate, and Associate Clinical Professor Emeritus, formerly of the University of Texas Southwestern Medical Center in Dallas, Texas. Dr. Knobbe is known primarily for his research, publications, and presentations connecting Westernized diets and industrial seed oils to numerous chronic diseases, including coronary heart disease, hypertension, stroke, cancers, type 2 diabetes, metabolic syndrome, obesity, Alzheimer’s disease, autoimmune diseases, and age-related macular degeneration (AMD). Dr. Knobbe’s research has focused greatly on the “vegetable oil hypothesis” as the primary driver of overweight and chronic disease. In 2016, Knobbe formally introduced the hypothesis that processed foods and vegetable oils are the primary drivers of AMD, which is the leading cause of irreversible vision loss and blindness in people over the age of 50 worldwide.
