Tallow Sweet Potato Fries

Ingredients
- 1 large sweet potato
- 1 Tbsp Paleovalley Grass Fed Tallow
- 2 Tbsp arrowroot powder
- ½ tsp smoked paprika
- ¼ tsp garlic powder
- ¼ tsp black pepper
- ½ tsp flaky sea salt

- Large bowl
- Parchment paper
Directions

Peel and slice potato into ¼ inch sticks. Place sliced potato in a bowl of cold water. Soak for 30 minutes. Drain and blot fry with a clean kitchen towel.

Preheat oven to 425ºF and line a large baking sheet with parchment paper. While the oven heats, melt tallow in a double boiler over medium heat, about 7-8 minutes.

Place fries in a clean bowl and drizzle with tallow evenly. Quickly toss to coat.

Stir together dry seasonings except for salt and add to bowl with potatoes. Gently toss to coat. Spread fries evenly on baking sheet. Bake for 15 minutes. Turn fries using tongs and bake 10-12 minutes longer.
