Tallow Fried Chicken Tenders Recipe
This is a Paleovalley family favorite that’s just too good not to share with our readers. Strips of pasture-raised chicken breasts are coated in a blend of gluten-free tapioca flour and savory seasonings before being shallow-fried in our Grass Fed Beef Tallow.
Instead of using processed oils to fry, beef tallow is a nutrient-dense, high-smoke point oil, ideal for frying without the inflammatory effects of industrial oils.
I seasoned these chicken tenders to mimic the flavor you would find at your favorite restaurant, minus the unnecessary preservatives, refined flours, and sugar. The end result is a crispy chicken tender that both kids and adults will love!
When it’s time to serve, the tenders can be enjoyed alone or with paleo-friendly honey-dijon, ketchup, or BBQ sauce.

Ingredients
- 1 lb. pasture-raised chicken breasts
- ½ cup tapioca flour
- ½ tsp sea salt
- ½ tsp black pepper
- ½ tsp onion powder
- ½ tsp paprika
- 2 large pasture-raised eggs
- ½ cup Paleovalley Grass Fed Beef Tallow

Directions
- Slice the chicken breasts into strips, ensuring they are even in size for consistent cooking.
- In a shallow dish, mix the tapioca flour with a generous pinch each of salt, black pepper, onion powder, and paprika.
- In a separate bowl, beat eggs to create an egg wash.
- Place your cast iron skillet over medium heat and add enough grass-fed beef tallow to generously coat the bottom. Heat until the tallow is hot but not smoking, about 5 minutes.
- Dip each chicken strip first into the egg wash, ensuring it’s fully coated. Then, dredge it in the seasoned flour mixture, coating it evenly.
- Working in two batches, carefully place the breaded chicken strips into the hot tallow in the skillet. Fry them for about 3.5 to 4 minutes on each side, or until they’re golden brown and cooked through. The internal temperature should reach 165°F (75°C) for safety.
- Once cooked, transfer the chicken strips to a plate lined with paper towels to drain any excess fat.
