Paleo Red Velvet Superfood Brownies

Serves: Makes 16 brownies

Ingredients

Brownies

  • ½ cup coconut oil, melted
  • ¼ cup cacao powder
  • ½ + ¼ cup dairy-free chocolate chips or chunks
  • 2 large eggs
  • ¾ cup maple syrup
  • 5 Tbsp coconut flour
  • 2 Paleovalley Red Velvet Superfood Bars, chopped into small chunks
  • ¼ cup beetroot powder, plus additional for dusting
  • ½ tsp salt

Frosting

  • 1 cup raw cashews (soaked for at least for 4 hours or overnight)
  • ¼ cup coconut oil, melted
  • ¼ cup maple syrup
  • 2 Tbsp lemon juice
  • Dash salt

Equipment

  • Parchment paper
  • 9 x 9 baking pan
  • Small saucepan
  • Blender

Directions

  1. Preheat oven to 350ºF and line your baking pan with parchment paper.
  2. Combine coconut oil, ½ cup of the chocolate chips, and cacao powder in a saucepan over medium heat. Stir until smooth (roughly 2 minutes).
  3. Pour this mixture into a bowl and add in eggs, beetroot powder, coconut flour, and salt and mix until thoroughly combined.
  4. Now, fold in Paleovalley Red Velvet Cake Superfood Bar chunks and remaining ¼ cup chocolate chips. Mix until chunks are evenly distributed throughout the batter.
  5. Add to your lined pan and bake for 20-22 minutes.
  6. While the brownies are baking, prepare the frosting. Drain water from soaking cashews and add them to a high-powered blender. Add in lemon juice, coconut oil, maple syrup, and dash of salt. Blend until frosting is smooth.
  7. Once the brownies are finished, allow to cool for 15 minutes before frosting. Frost, dust lightly with beetroot powder for color, then place the brownies in the refrigerator for 30 minutes to an hour to set.
  8. Enjoy and keep in the fridge for up to a week!
