Easy Homemade Protein Bars

Ingredients
Bars
- 1 cup pitted dates
- 1 cup tiger nut flour
- 3 scoops Paleovalley Salted Caramel Bone Broth Protein
- ¼ cup coconut butter, softened
- 1-2 Tbsp filtered water
Caramel Drizzle
- ¼ cup coconut butter, softened
- ½ scoop Paleovalley Salted Caramel Bone Broth Protein
Equipment
- Food processor
- Loaf pan
Directions
- Line a loaf pan with parchment paper and grease with olive oil or avocado oil cooking spray. Cover dates with hot water. Soak for 5 minutes to soften.
- Drain dates and add to a food processor. Blend until finely chopped. Add tiger nut flour, bone broth protein powder, and coconut butter. Blend until combined. With food processor running, add 1-2 tablespoons of water to spout, just enough to help the mixture form a sticky dough.
- Transfer mixture to loaf pan. Press into pan with damp fingers. Freeze for 20 minutes or until firm.
- While bars chill, stir together ingredients for caramel drizzle. Lift bars from pan using parchment paper. Slice into 5 bars and place on a parchment paper lined plate or tray.
- Drizzle with caramel drizzle. Freeze for 10 minutes to firm drizzle.
- Store bars in an airtight container in a cool dry location.
