Paleo Orange Cake Recipe

Paleo Orange Cake

Ingredients

  • Food processor
  • Large mixing bowl
  • Large pot
  • Standard cake pan

Directions

  1. Begin by placing whole oranges in a pot and covering with cool water. Bring to a boil and boil for 40 minutes. Make sure the water level stays high enough to cover the oranges.
  2. Rinse oranges and let cool slightly (enough so that you can hold them). Then, dice into ¼” pieces and allow to cool completely.
  3. Preheat oven to 320ºF and grease and line a cake pan with parchment paper.
  4. Once cooled, place chopped oranges in a food processor and blitz on high (you may have to stop and scrape them down the sides a few times) until a marmalade-like consistency forms. It’s okay if it’s a little chunky.
  5. Now add remaining ingredients: almond meal/flour, eggs, coconut sugar, Paleovalley Essential Electrolytes, and baking powder. Blend on high until well combined.
  6. Pour into prepared cake pan and bake for 60 minutes, until the surface is a deep golden.
  7. Remove and allow to cool fully before removing from cake pan.
  8. Garnish with a dashing of powdered sugar (optional) or additional orange slices.
