Blueberry Balsamic Pork Meatballs & Cauliflower Mash

Blueberry Balsamic Pork Meatballs & Cauliflower Mash

Yields 3-4 servings
Cooking Time: 15-20 minutes


  • 1 lb. ground pork
  • 1 egg yolk
  • ½ tsp. onion powder
  • ½ tsp. sea salt
  • ¼ tsp. fresh ground pepper
  • (optional) Italian parsley for garnish

Blueberry Balsamic Sauce:

  • ½ cup frozen or fresh blueberries
  • ⅓ cup Balsamic vinegar
  • pinch of sea salt & pepper

Cauliflower Mash Ingredients:

  • 1 head cauliflower, broken down into florets
  • 1-2 Tbsp. ghee
  • ½ tsp. sea salt
  • ¼ tsp. fresh ground pepper


  • Food processor


  1. Preheat oven to 350° F.
  2. Mix together ground pork, egg yolk, salt, & onion powder. Form into 1-inch meatballs. Lay them out on a sheet pan & bake for approximately 13-15 minutes or until cooked through.
  3. Boil cauliflower until soft. Add to a food processor, along with ghee, salt & pepper. Puree until smooth. 
  4. In a medium saucepan, combine all ingredients for the sauce. Cook over medium heat until reduced & thickened.
  5. Pour blueberry balsamic sauce over cooked meatballs. Serve with cauliflower mash. Garnish with parsley.
