Blueberry Balsamic Pork Meatballs & Cauliflower Mash
This is my NEW Favorite go to for Dinner And it Should be Yours too!
Blueberry Balsamic Pork Meatballs & Cauliflower Mash
Yields 3-4 servings
Cooking Time: 15-20 minutes
Ingredients:
- 1 lb. ground pork
- 1 egg yolk
- ½ tsp. onion powder
- ½ tsp. sea salt
- ¼ tsp. fresh ground pepper
- (optional) Italian parsley for garnish
Blueberry Balsamic Sauce:
- ½ cup frozen or fresh blueberries
- ⅓ cup Balsamic vinegar
- pinch of sea salt & pepper
Cauliflower Mash Ingredients:
- 1 head cauliflower, broken down into florets
- 1-2 Tbsp. ghee
- ½ tsp. sea salt
- ¼ tsp. fresh ground pepper
Equipment:
- Food processor
Directions:
- Preheat oven to 350° F.
- Mix together ground pork, egg yolk, salt, & onion powder. Form into 1-inch meatballs. Lay them out on a sheet pan & bake for approximately 13-15 minutes or until cooked through.
- Boil cauliflower until soft. Add to a food processor, along with ghee, salt & pepper. Puree until smooth.
- In a medium saucepan, combine all ingredients for the sauce. Cook over medium heat until reduced & thickened.
- Pour blueberry balsamic sauce over cooked meatballs. Serve with cauliflower mash. Garnish with parsley.
