MuffinElse Pancakes

The Pancakes You Need in Your Life!

Making pancake batter with coconut flour or almond flour is for lack of better terms, difficult. 

It requires far too many eggs to increase the moisture enough to make a batter with coconut flour ideal. It usually doesn't heat in a pan very well and falls apart. Then, there's the fact that it's not ultimately my favorite flavor. Ugh...see my struggle.

Well, I found a solution for us both...

Earlier this year, our team took headed to Austin, Texas where we attended the 2017 PaleoFX Health Conference. 

This is where we found this phenomenal gluten-free pancake mix!! So, today I've got an amazing product for you to try to make Gluten-Free Pancakes!

At Paleo FX we met Shira, who is the owner of a lovely little certified Paleo company known as MuffinElse. Great name right?!

The best part is, these heavenly tasting pancakes are super easy to make.

Just add water to the mix and make on a non-stick pan or griddle. No need to add oil, eggs, or anything else.

Trust me they are DELICIOUS!

They're light & fluffy. While we made them with blueberries the options are endless. If you're a parent your kids will love these!

MuffinElse Pancakes

Servings:  3-4
Cooking Time: 5 mins
Prep Time: 10-15 mins

Ingredients

  • 1½ cups of MuffinElse pancake mix (also Otto's Cassava Flour works great too!)
  • 1 cup of filtered water
  • 1 cup of blueberries or other toppings of choice
  • 1 tsp coconut oil
  • Equipment:
  • Non-stick pan or waffle maker if using to make waffles.

Directions:

  1. Whisk pancake mix with water till batter is smooth. Let batter rest for 1 minute to thicken. Add blueberries.
  2. Heat sauté pan with coconut oil on low.
  3. Add 2 Tbsps of pancake batter to make each pancake. Flip after larger bubbles begin to form on the top side of the pancake (3-4 minutes or until the pancake moves freely in the non-stick pan). 
  4. Flip pancake and cook another 1-2 minutes. Serve with drizzled raw honey or a coconut whipped cream.

***Always opt for organic for any of the ingredients whenever possible and always 100% grass fed/grass finished for the meat, wild caught for fish, and pasture raised for pork and poultry.

Whether you use the MuffinElse mix or Otto's, this is a perfect workaround for breakfast to mix things up without flying off the deep end health wise.
